French born and trained, the innovative and influential chef Alexis Benoit Soyer (1810-1858) arrived in England in 1830 to join his brother Phillipe on the household staff of the Duke of Cambridge. By 1837 he was chef de cuisine at London's Reform Club. Author of several books on food and cooking and inventor of several innovative kitchen apparatus. His wife, Elizabeth Emma Jones (1813-1842) was an accomplished artist. The portrait engravings in this volume are from her paintings. Bitting p. 443; Cagle 1003, Oxford p. 176.
